CULINARY ARTS 1 (3 per day)  E#C120500 mmc                    9851 Honors/9852 College Prep             15 credits

Prerequisite: Successful completion of Exploratory program--Others with approval of Career & Technical Education Director.

In the first year, emphasis will be placed on identification of hand tools and equipment, cooking methods and techniques, and preparation of soup stocks, sauces, gravies, salads, and baking. Students will also gain experience working in the restaurant operated by the students. Related classroom instruction is included in the course of study along with instruction in shop safety.  Meets Academic Expectations 1,2,3,4 & 5


CULINARY ARTS 2 (3 per day)  E#C120500 mmc                    9861 Honors/9862 College Prep    15 credits

3 periods per day/Prerequisite: Culinary Arts 1--Others with approval of Career & Technical Education Director. 

Second year students will be instructed in shop safety, preparing breakfast, appetizers, fruits and vegetables. Cooking with herbs and spices, and instruction in garde manager is included in this course. Related classroom instruction is part of the course of study.  Meets Academic Expectations 1,2,3,4 & 5


CULINARY ARTS 3 (4 per day)  E#C120500 mmc                    9881 Honors/9882 College Prep             20 credits

Prerequisite: Culinary Arts 2--Others with approval of Career & Technical Education Director.  Third year students will receive training in preparing beef, veal, pork, lamb, poultry, fish, and shellfish. In addition, menu planning, food costs, and entrepreneurship skills are stressed. Cooperative placement for qualified seniors will satisfy course requirements.  *Students maintaining a “B” average in specific course work in this program will be eligible for college credit.  Meets Academic Expectations 1,2,3,4 & 5

Prerequisite: Grade 12 - Student  “See eligibility requirements – Page #35”

This program is designed to provide seniors with an opportunity to combine daily school instruction with on-the-job training.  Students, who are paid for their work, are covered by Workman's Compensation Insurance.  Students earn course credits and gain invaluable work experience.  Cooperative Education also provides the students with an opportunity to become more self confident, plan career goals, and gain a better understanding of their academic and related career and technical course work.
